Pepper Steak with Black Bean Sauce

Ingredients:

  • Marinade
    • 4 tsp oyster sauce
    • 1.5 tsp sesame oil
    • 1 tsp minced fresh ginger
    • 2 tsp dry sherry
    • 1 tsp dark soy sauce
    • 1 tsp sugar
    • 1.5 tsp cornstarch
    • Freshly ground pepper
    • 3/4 lb london broil
  • Sauce
    • 4 tsp oyster sauce
    • 1.5 tsp sesame oil
    • 1 tsp dark soy sauce
    • 1 tsp sugar
    • Ground pepper to taste
    • 2 large garlic cloves, crushed
    • 2 tbsp fermented black beans, washed, rinsed & drained
    • 3 tbsp peanut oil
    • 1/2 inch thick slice fresh ginger, peeled
    • 1 med green bell pepper
    • 1 med red bell pepper
    • 1 med onion- cut into medium strips
    • 2 med tomatoes cut into quarters
    • 1/4 cup chicken stock
    • 2 tsp corn starch

Directions:

  1. Combine the marinade ingredients. Add the beef; allow to set for 1-2 hours.
  2. Heat a wok over high heat. Add 1 tpsp of the peanut oil and coat the wok.
  3. Add the ginger, peppers, tomatoes and cook, stirring for 1 minute. Transfer the peppers and tomatoes to a small bowl, and set aside. Wipe off the wok.
  4. Heat the wok over high heat for 30 seconds. Add 2 tbsp peanut oil, garlic and black bean paste and stir.
  5. Add the beef and marinade. Cook for 1 minute.
  6. Add reserved peppers and cook, stirring for 2 minutes. Add chicken stock and cornstarch to thicken sauce.
  7. Serve with cooked rice.

Yields 6 servings.
